Located in Savigny-lès-Beaune, north of the Côte de Beaune, Domaine Jean-Michel Giboulot has 12 hectares of vines in the finest appellations (Beaune 1er Cru, Pommard, Savigny 1er Cru, Savigny-lès-Beaune, Savigny-lès-Beaune 1er Cru, with a majority of Pinot Noir). The vines are organically grown. The vinification is traditional with little intervention from the winemaker, using stainless steel and wood, and controlled temperatures.
Pale yellow gold with greenish-silvery undertones. Acacia, hawthorn, lemon, quince, apple, pear, white peaches, and almond dominate the aroma, with hints of pepper, liquorice, and honeysuckle. They are fresh and balanced on the tongue, with luscious fruit and a delicate marl minerality. The finish is light and melting, with notes of lemon, mandarin, and white-fleshed fruit.
