Located in Savigny-lès-Beaune, north of the Côte de Beaune, Domaine Jean-Michel Giboulot has 12 hectares of vines in the finest appellations (Beaune 1er Cru, Pommard, Savigny 1er Cru, Savigny-lès-Beaune, Savigny-lès-Beaune 1er Cru, with a majority of Pinot Noir). The vines are organically grown. The vinification is traditional with little intervention from the winemaker, using stainless steel and wood, and controlled temperatures.
Jean-Michel Giboulot cultivates a hectare planted with sixty-year-old Pinot Noir. Its savigny, exudes scents mixed with flowers and raspberry on a noble woody background. On the palate, it has a beautiful volume, reinforced by a solid tannic weft and a fine acidity that ensure an appreciable length and a good aging potential.
