Wilyabrup fruit from a special tract of Margaret River land that has a sharp maritime influence, with bright acid and a saline element. Native yeast fermented in stainless steel and matured on lees in tank to build texture without dulling freshness. Subtle nose of passionfruit and just-ripe pineapple follows up with a solid hit of guava and ripe pear on first sip. This then softens out to a more savoury, herbaceous character, leaving a lingering acidity and round finish.
