Paxton are leaders in both Organic and Biodynamic viticulture and winemaking, having held certification for both since 2011. Fruit for all the wines are sourced solely from estate vineyards in McLaren Vale in South Australia. Paxton focuses on Shiraz, Grenache and Cabernet Sauvignon, but also see big futures in the Vale for Mediterranean varieties Tempranillo, Graciano, Mataro and Pinot Gris.
Paxton's flagship wine from vines originally planted in 1887, producing fruit of exceptional flavour and natural balance. A powerful yet graceful nose, with deep raspberry and blackberry characters, a touch of mountain pepper leaf and cassia bark add to the complexity. Full bodied wine with startling intensity yet a brightness at the same time. Elegant like slipping into a velvet suit or dress and heading to the opera in Paris. Fine, slightly chalky tannins are juxtaposed against a typically generous Shiraz mid-palate and long, lingering hints of cacao beans and roasted fennel seeds
